Breakfast: Very Berry Milk Shake

Lunch at ba’al cafe and falafel: Falafel, Hummus, Tabouli, Pita with Olive Oil and Sesame Seeds—falafel was good. Tabouli was awesome. Pita with olive oil and sesame was a nice touch. Hummus was ehh.

Dinner: Rice and Beans, Sauteed Kale, Avocado and Tomato Salsa, My NG Vegan Brownie—I used the left over 6 grain rice for rice n beans. Very good. Avocado and tomatoes are out of season right now, but sometimes you just want to have fresh vegetables in a middle of winter.

Lunch: Simple Tomato-Basil Spaghetti—the taste of summer, one last time.

Snack: Oats ‘n Honey Bar

Dinner: Rice and Beans with Avocado and Tomato

Dessert: Almond Cookies!

Monday’s Menu 8/20

Green Goddess

Breakfast: Coffee, Green Goddess Shake

Lunch: Orange Glazed Tempeh and Broccoli, Rice & Beans, Iced Mint Tea

Dinner: Fresh Tomato & Basil Spaghetti, Strawberry Ice Cream and Dark Chocolate Covered Digestives, Limeade—when you can get ripe fresh tomatoes cheap, this is the dish to make. No heat is used to make this sauce. Just mix chopped fresh tomatoes, basil, olive oil, salt, pepper, cayenne pepper in a big bowl and wait at least half an hour. Mix with cooked pasta. Simple and good.

Dinner: Potato Salad, Wholewheat Bread, Sauteed Kale, Strawberries, Vegan Chicken Ham, Vegan Butterly Spread—I’m not trying to make any more of bread at home. After 4 times of trials, I never had one good-looking loaf…

Wednesday’s Menu 6/6

Green Goddess

Breakfast: Coffee, Green Goddess

Lunch Bag on the Park: Beet Stew, a slice of Carrot Cake

Dinner: Sauteed Tofu and Shiitake Mushrooms, Rice and Beans, Corn Salsa, a slice of Carrot Cake with Strawberry-Tofu-Creamcheese-Cream—the dinner is leftovers from the last few dinners, but carrot cake is new! I like this vegan cream. I wasn’t sure if I liked it or not, but I realized that I was licking the knife which was used to scoop out the cream out of the blending cup.
