Breakfast: Coffee, Very Berry Milk Shake

Lunch: Spaghetti with Sun Dried Tomato-Basil Sauce and Fresh Tomatoes—yum yum as usual.

Dinner at Soy and Sake: Tempura Bento-Box—I love tempura, but since it requires to have a lot of oil in hand, I hardly ever make them any more. You can keep using the oil for awhile, but who wants to eat tempura every day? Thus it is often my choice of dish when I go out to a Japanese restaurant.

Green Goddess

Breakfast: Iced Coffee, Green Goddess Shake

Lunch: Blueberry Pancakes with Banana, Strawberries, Vegan Butter and Maple Syrup, Iced Mint Tea—sometimes you want a breakfast for lunch. I indulge myself for a hot Saturday.

Dinner: Brown Rice Penne with Raw Tomato Sauce and Tomatoes, Sauteed Kale, Bell Pepper Antipasto, Pickled Carrots and Pickled Celery, Banana-Chocolate Pudding

Saturday Breakfast

Breakfast: Coffee, Kale-Banana-Almond Milk Shake, Blueberry Pancake with Banana

Lunch on the Road: Spinach Salad, Muti-Seeds Cracker, Rice & Beans

Dinner: Linguine with Raw Tomato Sauce, Fried Okra, Sauteed Squash—my friend cooked up okra. There was some egg in the batter, shhhhh. This was my first time to eat fried okra. They were like pop-corns! The raw tomato sauce never fails.

Wednesday’s Menu 6/27

Everything Shake

Breakfast: Coffee. Everything Shake (OJ, Strawberries, Blackberries, Blueberries, Pineapple, Tofu, Green Vibrance)

Lunch: Spaghetti with Raw Tomato Sauce, Sauteed Swiss Chard, Grape Tomatoes, Flat Bread, Iced Mint Tea

Dinner with a friend at Quantum Leap: Vegan BBQ Chicken—mmmmmm, this dish was okay. The BBQ sauce was good, but overpowered everything else. I don’t think I will get this again. I will stick with their vegan version of Mexican Plates. My friend’s Nacho was better.

Dessert: 3 Newman’s O Cookies—sometimes you just have to have chocolatey sweet thing.

Pink Shake

Breakfast: Coffee, Pink Shake (OJ, Tofu, Pineapple, Raspberry, Banana)

Lunch: Raw Tomato Pasta—this is so easy to make and so yummy. I spiked it up with sauteed kale and fresh grape tomatoes. Half Redbean Bun from Panya.

Late Night Snack: Corn Salsa, Baked Sweet Potato, Soybeans with Kelp

Tuesday’s Menu 5/22

Green Goddess

Breakfast: Coffee, Green Goddess Shake

Lunch: Butternut Squash Pancakes, Arugula Salad, Mint Tea—I’m still in a weekend mood.

Dinner: Broccolini, Tomato, Shiitake Mushrooms with Spaghetti

Snack: 6 crackers, 3 baby carrots, 3 bites of hummus, a handful of cashews and almonds, 5 dried apricots, a dozen grape tomatoes and grapes—there was an end of semester  party at Art Students League. I totally forgot about it. I was glad there were a lot of vegetarian options.

Sunday’s Menu 5/20

Green Goddess

Breakfast: Coffee, Green Goddess Shake—Ah, Green Goddess. I have not bored with you yet.

Lunch: Raw Tomato Sauce with Spaghetti

Dinner in 10 minutes: Mustard Leave Dumplings (wheat flour, mustard leaves, mung beans, mushrooms, carrots, cabbage), Vegetarian BBQ Pork Steamed Bun—Michael needed to leave in 15 minutes and he was hungry. This was a dinner in a hurry. I must go back to May Wah to restock.

Snacks: Roasted Beets, Quinoa Salad, Banana Ice Cream from Lula’s (vegan), Rice Crackers, Roasted Almonds and Cashews—my cut off eating time in the evening is 9 p.m. I was just getting hands on the good snack, Beets and Quinoa Salad. Then I couldn’t stop eating. Have a bite of  savory, drink a tea, have a bite of sweet, drink another tea. Repeat. I repeated until it became 9:45. This was one of those nights I needed a treat, but didn’t know exactly what…
