Thursday’s Menu 8/16

Tropical Shake

Breakfast: Coffee, Tropical Shake

Lunch: Ratatouille, Vegetarian Paratha—exactly the same lunch fro yesterday

Dinner: Lentil Burgers, Pickled Onion, Pickled Celery, PIckled Broccoli, Pita, half Paratha—I made lovely Potato Salad, but the glass bowl slip out of my hand when I was taking it out of the refrigerator, and it shattered into pieces all over the kitchen and beyond. I couldn’t save any part of it, being afraid of eating up small pieces and powdered glass. 😦

Lunch: Bell Pepper, Muti-Grain Panini Bread, Daiya Soy Cheese, Limeade, Almond Cake from Bread Alone

Dinner: Lentil Burger, Tomato, Kale, Pita, Pickled Onion, Pesto Pasta, Banana-Chocolate Pudding, Lemon Date Balls

Lunch: Lentil Burgers with Pickled Onion and Carrot, Tomato, Pita, Red Grapes

Dinner: Cauliflower Curry, Pita, Cherries

Snacks: Roasted Chestnuts, Banana-Chocolate Pudding

Friday’s Menu 6/22

Green Goddess

Breakfast: Coffee, Green Goddess Shake—the resin in dark dinosaur kale started to bother me. It changed the taste of Green Goddess Shake. I parboiled kale to reduce the resin content, which helped some but not completely. I might take a break from kale shake for a while.

Lunch: Lentil Burger again. It’s so good and I made tons of them.

Dinner: Beet Stew, Guacamole, Tomato Salsa, Flat Bread, Mango, Iced Mint Tea, Newman’s Chocolate Cookies and Berries

Saturday’s Menu 6/16

Apple Energy

Breakfast: Apple Energy, Coffee

Lunch: Vegetarian Burger, Tomato, Pickles, Fresh Corn Salsa

Dinner at Quantum Leap: Quesadilla Grande—vegan Mexican dish. Little too much refried beans in them for my taste, but a nice surprise. My friend’s choice, the vegan chorizo taco was a hit. I will go back there. 🙂

Dessert: Orange Chocolate Chip Vegan Pound Cake from  Sacred Chow—it was ok. My scones and vegan cakes are better.
