Dinner: Quinoa Salad, Hummus, Pita, Tangerines—these organic tangerines from the Co-op are so good. The closest tangerine to one I can eat in Japan.

Lunch at Health Nut: Lentil, Quinoa Salad, Kale Salad, Beets, Rice Ball—I chose all cold food today.

Dinner: Kale Salad with Avocado, Hummus, Quinoa Salad, Pita—oh, lovely kale salad. My lunch inspired me to make my own.

Picnic Lunch at the Minewaska State Park: Veggie Burger with Tomato and Cucumber, Pita, Apple, Potato Chips—the best picnic lunch on a beautiful day by the lake.

Dinner on the go: Falafel Platter, Spinach Pie, Baklava

Lunch 1: Vegetarian Paratha, Green Beans with Sesame Dressing

Lunch 2: Vegetarian Couscous, Sauteed Kale and Lambs Quarter, Hummus, Pita

Potluck Dinner on the Rooftop with Fireworks: My Vegetarian Couscous, My Hummus, My Marinaded Bell Peppers, Guacamole and Corn Chips, Wheat Crackers, Baby Carrots, Grape Tomatoes, Zucchini, Corn on the Comb, Blueberry Graham Cracker Pie, Crazy Jello, My Mixed Berry Vegan Ice Cream—oh, boy. I was still full when I wake up this morning.

Lunch: Beet Soup, Hummus, Marinaded Bell Peppers, Avocado, Tomato, Flat Bread, Corn Salsa

Picnic Dinner at the Summer Stage on the Park: Lentil Burgers, Pita, Tomatoes, Strawberries, Lime-Date-Balls, Baklava—we camped out right outside of the  Summer Stage for the sold-out Norah Jones’ concert. We heard everything well except the anchor songs. Since there was no view any way, there was no fight for a spot.

Breakfast: Green Goddess, Coffee, 1/2 slice of Chocolate Cake from Bread Alone—I was going to indulge myself with the Almond Cake, but they didn’t have it at the market today.

Lunch at Baoguette: 1/2 Veguette (Vegetarian Kung Pao Soy Protein, Cilantro, Cucumber, Pickled Daikon) , Green Papaya Salad

Dinner: Hummus, Sauteed Sale. Moroccan Carrots, Quinoa Salad, Toasted Multi-Grain-Cranberry Bread
