Middle East Platter

When it is hot outside, your appetite goes down even if you were staying in a refrigerator-cold-office for all day long. Plus I was tired of eating the same eggplant dish 3 times in a row. I love eggplants, but I can’t eat the same dish more than twice in a row. So, I whipped up easy summer meal for tonight.

Ingredients for Hummus:
2 cups cooked chickpeas (drain well)
4 Tbsp tahini
1 Tbsp olive oil
2 Tbsp lemon juice
1 tsp sea salt
1 clove garlic
1 tsp cumin
1 tsp coriander seeds
a dash of cayenne powder
2-3 scallions

  1. Crash a garlic clove. Roughly chop scallions. Blend everything by a hand mixer until it becomes smooth.

Ingredients for Parsley Salad:
1 bunch parsley
1 tomato
1 small cucumber (like kirby)
2-3 scallions
3 Tbsp lemon juice
1 Tbsp olive oil
1/2 tsp sea salt
1/2 tsp cumin
1/2 tsp coriander seeds
a dash of smoked paprika

  1. Chop parsley and scallions. Dice a tomato and a cucumber into small cubes. Put everything in a bowl. Mix well. Let it sit in a refrigerator until ready to eat.

I just came back from a lunch with a friend at Cafe Orlin. A nice surprise. Hijiki Salad came with breaded tofu, watercress and avocado. A nice quiet dressing binds everything. Vegetarian Combo was scrumptious. Even the plain looking rice had a nice touch. Was it coconut milk or broth? I had Iced mint tea to wash it all down. She wanted to eat outside to de-freeze from her ice cold office. A perfect laid back cafe to have a vegetarian lunch. I will come back here.

Lunch at Mamoun’s Falafel: Falafel, Hummus, Baba Ganouj, Lettuce and Tomato, Pita—a satisfying platter. Good falafel, good hummus, and good baba ganouj.

Dinner: Pasta Marinara with Grape Tomatoes

Breakfast: Very Berry Milk Shake

Lunch at ba’al cafe and falafel: Falafel, Hummus, Tabouli, Pita with Olive Oil and Sesame Seeds—falafel was good. Tabouli was awesome. Pita with olive oil and sesame was a nice touch. Hummus was ehh.

Dinner: Rice and Beans, Sauteed Kale, Avocado and Tomato Salsa, My NG Vegan Brownie—I used the left over 6 grain rice for rice n beans. Very good. Avocado and tomatoes are out of season right now, but sometimes you just want to have fresh vegetables in a middle of winter.

Breakfast: Coffee, Green Goddess Shake (with frozen strawberries instead of peaches since I was out of frozen peaches.)

Snacks: Rice Crisp, Mocha

Dinner at Nanoosh: Falfarro (falafel, hummus, tahini sauce, sauteed farro)—this was very good and flavorful unexpectedly. I think Nanoosh is the best falafel chain in town.
