Friday’s Menu 6/22

Green Goddess

Breakfast: Coffee, Green Goddess Shake—the resin in dark dinosaur kale started to bother me. It changed the taste of Green Goddess Shake. I parboiled kale to reduce the resin content, which helped some but not completely. I might take a break from kale shake for a while.

Lunch: Lentil Burger again. It’s so good and I made tons of them.

Dinner: Beet Stew, Guacamole, Tomato Salsa, Flat Bread, Mango, Iced Mint Tea, Newman’s Chocolate Cookies and Berries

Very Berry Shake

Breakfast: Coffee, Very Berry Shake

Lunch: Guacamole, Fresh Corn Salsa, Rice and Beans, Pita—ooooh, everything was tasty.

Supper: Beet Stew, Wholewheat Toast, a slice of Carrot Cake—my first attempt of vegan carrot cake. I will make it a bit more moist and sweeter next time.

Friday’s Menu 5/ 25

Green Goddess

Breakfast: Coffee, Green Goddess Shake

Lunch: Roasted Pepper/Arugula Sandwich on a Muti-Grain Panini Bread, Grape Tomatoes, Guacamole, Tomato Salsa, Tortillas, Balsamic Vinegar

Snack: Half of a donut…my weakness to the sweets. But last time I had a donut was more than 1 year ago.

Dinner: Raw Tomato Soup, Sauteed Kale, Avocado, Roasted Beets, Sweet Brown Rice, Nori, Arugula, Wasabi Soysauce—I wrapped rice, kale and avocado in nori, and dip it in wasabi soysauce. It is an instant vege roll. It is so simple, yet yummy.

Lunch: Roasted Pepper Sandwich

Lunch: Abekawa (toasted Sticky Rice Cake, Nori, Soysauce), Soybeans, Sweet Azuki Beans, Grape Tomatoes, Orange Tea,

Sumptuous Mexican Dinner: Guacamole, Tomato Salsa, Tortillas, Refried Beans, Baked Tofu, Sauteed Kale, Roasted Bell Pepper, Arugula Salad—I was looking for a reasonably priced yummy Mexican restaurant in the neighborhood. I found one right at home. 🙂
