Mushroom Tacos and Ensalade de Mercado

LUNCH: I went to La Camelia for lunch with a friend. We ordered Ensalada del Mercado and Mushroom Tacos. They were both good, but where is jicama? The menu said Ensalada del Mercado has jicama in it, and that’s why we ordered it. We were talking about liking jicama in a salad which we ate all the time when we were in Mexico.

DINNER: I made sweet potato burgers, something different. They didn’t need ketchup. I added cumin, turmeric, cayenne, black pepper, and salt to the sweet potato mixture, but I could spice them up even more. Michael suggested some creamy sauce would be a nice match in stead of ketchup. Stay tuned for a better version. Then I will put recipe on.

Lunch:Kale Salad, Baked Sweet Potato

Dinner: Sauteed Flat Rice Noodles with Green Beans, Shiitake Mushrooms, and Broccoli in Black Beans Sauce—Black Bean Sauce is versatile. It turns broccoli, eggplant, tofu, green beans, bok choy, mushrooms into a dish in 15 minutes.

Lunch: Wild Mushroom, Beans and Kale Soup, Butternut Squash Pancake, left-over Chicken Pakora

Dinner: Green Noodle Salad (Green Noodles, Carrots, Green Beans, Grape Tomatoes, Red Pepper, Sesame Oil, Tamari, Rice Vinegar), Red Grapes—a light supper. M said it’s like eating at a health retreat.

Breakfast: Coffee, Light Pink Shake—I meant to make Tropical, but there was no OJ in the fridge. I had to modify it by adding raspberries, otherwise it is too plain.

Lunch: Eggplant Tofu Lasagna, Fuji Apple

Dinner: Udon Noodle Soup Delux (Udon Noodle MIso Soup with Enoki and Chinese Cabbage, Green Beans with Sesame Dressing, Kimpira Gobo, Simmered Soy Beans), Beet/Avocado/Tomato Salad—loved it.
