Breakfast: Coffee, Purple Shake (Banana, Apple Cider, Blueberries, Green Vibrance, Tofu)—I like this purple shake once in a while. It’s a refreshing drink and it still can accommodate green vibrance.

Lunch at Num Pang: Cauliflower Sandwich, Corn on the Comb—ah, my favorite sandwich at Num Pang. And Corn is a must to have.

Dinner: Butternut Squash Curry over Sweet Brown Rice, Fuji Apple, 2 Chocolate Covered Biscuts

Tuesday’s Menu 11/20

Tropical Shake

Breakfast: Coffee, Tropical Shake with Parsley

Lunch: Japanese Yum Sandwich and Corn from Num Pang—oh, so satisfying. I don’t go there all the time because the line is outrageous. But today, there were only 3 people on line before me. It’s already holiday weekend and not many people were working in midtown.

Dinner: Kale Quinoa Salad, Simmered Sweet Potato, Toast, Beet Stew

Saturday’s Menu 11/10

Pink Shake

Snacks: Donuts at Donut Plant, Puffy Rice Crackers at Essex Market—walked around in Lower East Side, and ate around like a tourist.

Breakfast: Coffee, Green Goddess Shake

Lunch: Falafel, Quinoa Salad, Raw Kale Salad, and Pita with Tahini-Lime Dressing

Dinner: Mustard Leave Dumplings, White Rice, Nori—easy. Cheating. Yummy.

Dessert: Espresso and Raspberry Ice Cream from Lula’s

Monday’s Menu 9/10

Green Goddess

Breakfast: Coffee, Green Goddess Shake

Lunch: none!–what happened to that? I almost never skip any meal.

Dinner: Fresh Tomato-Basil Pasta, Eggplant Salad, Cornbread—where did my fabulous Cornbread recipe go? This batter looked drier than usual. I couldn’t find my original recipe until a few hours later this was baked. This version tastes fine, just bit drier. I’m putting my original cornbread recipe on the Recipe Page, so that I will never loose it.

Lunch: Mexican Open Sandwich on Flat Bread (Refried Beans, Sauteed Green Bell Pepper, Onion, Swiss Chard, Corn, Daiya Cheddar Cheese), Yellow Peach, Grape tomatoes, Pistachio, Yellow Peach

Snack: Chestnut Bun

Dinner: Mustard Leave Dumplings, Sticky Black Rice with Edamame and Hijiki, Yellow Peach

Sunday’s Menu 7/29

Breakfast: Coffee, Kale/Banana/Strawberries/Pear Juice/Almond Milk Smoothie

Snack during the Open Studio Tour: Scone, Green Beans/Kale/Cucumber Salad, Pumpernickel—my friend’s friend, artist, was very nice and entertained us with snacks, which sadly  I couldn’t eat: beef hotdogs,  pork chop, and cheese. The only thing i could eat was this green salad.

Dinner: Baked Beans, Boiled Corn, Boiled Turnip and Daikon with Miso Sauce, Sauteed Turnip Greens—sadly this corn was not great although it just came from a farmer’s market only yesterday.

Potluck Snack Lunch on the Park: Baby Summer Squash and Bell Peppers in Olive Oil and Balsamic Vinegar, Muti-Seeds Wholewheat Crackers, Strawberries, Lemon Puff Cream Sandwich Cookies—my Baby Summer Squash and Bell Peppers in Olive Oil and Balsamic Vinegar was very popular. Iv’e got many “this is very good!” 🙂

Dinner: Fried Rice (kale, sweet brown rice, smoked vegan ham, onion, corn, sesame seeds), Baked Tofu, Lemon Dates Balls

Lunch: Baked Sweet Potato, Mushroom Tamale, Watermelon-Mango-Ginger Popsicle at the Beacon Music Festival—the sweet potato was not good. It’s off season now. I will wait until the fall comes.

Dinner at Tito Taqueria in Beacon with friends: Portobello Mushroom Taco, Tofu Taco, Rice and Beans, Corn on the Comb!—the corn was the best.

Dessert: Home made Banana Ice Cream, 4 Garibaldis
