Apple Energy

Breakfast: Coffee, Apple Energy Drink (Apple Juice, Blueberries, Green Vibrance)—quick and refreshing drink. I didn’t want to fill up with my usual shake before a big DimSum lunch with friends.

Dim Sum at Buddha Bodai: BBQ Veg Meat, Shrimp Dumplings, Dumpling Cantonese Style, Watercress Dumplings, Fried Sticky Rice, House Special Congee, Buddha Bean Curd Rolls, Sauteed Pea Pod Leaves, Sweet Sticky Rice Balls with Coconut—Ohhhh, this is the best vegetarian restaurant in Chinatown. I missed to order my favorite Bean Curd Roll dish because I couldn’t remember its name. Next time, I will order every dish has “Bean Curd Roll” in it.

Potluck Supper at El Jadin: bites of hummus, 2 baby carrots, a small bowl of Veg Curry over Rice & Beans, a few Berries

Supper at home: Vegetarian Curry, Wholewheat Toasts, Pasta with Tomato, Basil, and Greens, Russian Dark Ale

Green Goddess

Breakfast: Coffee, Green Goddess Shake

Lunch: Roasted Pepper/Arugula Sandwich on a Muti-Grain Panini Bread, Grape Tomatoes, Guacamole, Tomato Salsa, Tortillas, Balsamic Vinegar

Snack: Half of a donut…my weakness to the sweets. But last time I had a donut was more than 1 year ago.

Dinner: Raw Tomato Soup, Sauteed Kale, Avocado, Roasted Beets, Sweet Brown Rice, Nori, Arugula, Wasabi Soysauce—I wrapped rice, kale and avocado in nori, and dip it in wasabi soysauce. It is an instant vege roll. It is so simple, yet yummy.

Lunch: Roasted Pepper Sandwich

Sumptuous Mexican Dinner: Guacamole, Tomato Salsa, Tortillas, Refried Beans, Baked Tofu, Sauteed Kale, Roasted Bell Pepper, Arugula Salad—I was looking for a reasonably priced yummy Mexican restaurant in the neighborhood. I found one right at home. 🙂

Lunch: Sauteed Kale/Swiss Chard, Roasted Beets, Sweet Brown Rice, Soybeans, Strawberry/Raspberry Salad

Dinner: Fried Rice with Vegan Chicken Ham, Greenpeas, Mung Bean Sprouts, and Carrots, Curry Stew—I didn’t do anything to this curry stew except letting it sit in the refrigerator for 3 days. Now it tastes so much better. All the spices come together and the flavor nicely blends in.
